Mother’s Day is a time to remember our mothers and all that we learned from them and all that they mean to us.  If you are lucky enough to still have yours in your life, do something special for her.

PURE GREEN COFFEE BEAN EXTRACT

RECIPES

2 recipes from a covered dish dinner we had at our house.  Loved them!  These recipes have been added to “Linda’s Cookbook” and can be downloaded from there directly to your computer (:

MANGO-PEAR SALSA

2 ripe mangoes , chopped
1 very ripe pear, peeled  cored and chopped
1 avocado chopped
About 1/2 of a large white onion diced quite small
1 jalapeño pepper , seeds removed and diced small
About 1 cup of cilantro  chopped
Juice from freshly squeezed lime
Salt and pepper to taste
Mix everything together and refrigerate for an hour or so before serving. You may have to add a little more lime juice just before serving ,if the fruit absorbs too much.
It is best if you chop the pear and mango and avocado about the same size.

MEXICAN PASTA SALAD

(Bonnie Pappas)

3 cups uncooked rotelle pasta (8 oz)

15 oz whole kernel corn, drained

15 oz black beans, rinsed and drained

1 large green bell pepper, chopped

(if using chopped frozen bell peppers it is 1 1/2 c.)

1 c. shredded cheddar cheese

3/4 c. thick & chunky salsa

1/3 c. chopped fresh cilantro or 1/3 c. parsley

1/2 c. vinaigrette dressing

Cook pasta according to package directions

Rinse pasta with cold water after cooking.

Place pasta in a large salad bowl followed

by all other ingredients.

Mix well

Cover & refrigerate for 2 hours so flavors can blend

by all other ingredients

Serves 12.

Information for diabetics:

The Dexcom seven plus (device)…it actually has a little needle that sticks in a fatty area of ones body…and continually reads your blood sugar levels…it looks like The Patch (another contraption for diabetics)  but is more advanced and accurate .  It is about the size of a silver dollar .  My friend’s son thinks it is the best thing ever!

Loved my new-found use for crystal candlesticks while the tiny gardenias are in bloom (or any other small flower from your garden)
